Freekeh is an ancient food product made from hard or soft wheat grains harvested at a very early stage—while still green and not fully mature. It is known for its distinctive roasted, smoky flavor

Freekeh is produced through three main steps:

Early Harvesting (Green Wheat): Wheat heads are collected while still green and tender.
Roasting and Smoking: The green wheat heads are roasted over fire, giving them their smoky flavor while preserving the inner grains.
Rubbing and Cracking: The roasted grains are rubbed to remove the charred husks, then cracked and cleaned

Nutritional and Medical Importance

Freekeh is a highly nutritious whole grain, exceptionally rich in fiber (prebiotics), protein, and minerals. Medically, it helps regulate blood sugar due to its low glycemic index, supports digestive and heart health, and aids in weight management thanks to its strong satiating effect.
